I'm not convinced that this is an attractive picture, but with my feeb camera, it's the best I could do. Don't let the poor photography trick you into thinking that this might not be the tastiest spaghetti squash recipe in the world. Oh no! It is very, very good.
If your farmer's market is anything like mine, then you have a plethora of squash to choose from these days. I enjoy cooking and eating squash. In fact, it's one of my favorite things to eat in the fall. The Husband, however, is highly suspicious of the entire squash family in general. Given his sensitive palette, I decided to try a spaghetti squash and cook it like I would regular pasta. Because I heard the rumor that you could do that with spaghetti squash. Otherwise, why on earth would they call it that. Am I right?
I was impressed with the results, but The Husband was not. I even added spicy sausage to entice his inner carnivore. No luck. Little Bear, on the other hand, loved the stuff. We ended up eating the leftovers for lunch all week long. The kalamata olives added an extra oomph to the taste, keeping it from straying into bland territory. The added bonus was that I was able to use some of the tomatoes that I canned this summer, giving me a delightful feeling of self-sufficiency. Now on to the recipe...
Spaghetti Squash Casserole1 large spaghetti squash, roasted
Roast squash at 325° for about 1 hr until tender, remove seeds and set aside
Cook 1 lb spicy sausage (optional) in large skillet until brown.
1 onion, chopped2 Tbs garlic, minced
Add to sausage and sauté until golden.
Add 1 qt. chopped tomatoes, 1 Tbs basil, fresh ground black pepper. Cook until you have a thick sauce, around 15 minutes.
Remove squash strands with fork and layer them in a 9x13 dish. Layer sauce over the squash and top with chopped kalamata olives. Sprinkle mozzarella cheese on top. Bake for 20 minutes or until cheese is melted.

Ooooohhh! I love spaghetti squash. If you want a little extra kick try adding some feta cheese to this. It's super yum!

Spaghetti squash is awesome-unless cooked improperly, then it's absolutely disgusting! I honestly don't know how your hubs got so picky....Add sausage and garlic to anything and it should taste fantastic!

Honestly, I would eat sausage and kalamata olives with my old flip-flops.
I've always eaten spaghetti squash with tomato-y stuff, too. My VA friend served it to me once with butter and brown sugar. Very good! .....but see above flip-flip comment.
